Lemon Lovers Lentil 

This is soup for anyone who loves lemons. If you’re not a lemon fan, you might not like this soup. I made it when I wasn’t feeling well for a boost of Vitamin C. I hope you enjoy!

Ingredients
1 cup brown or green lentils, rinsed
1 tablespoon olive oil
1 1/2 – 2 diced shallots (about 1 cup)
1 bunch of leafy greens (such as swiss chard, spinach, or kale)
4 cups vegetable broth (or chicken)
1 cup water
Juice of 2 lemons
Salt & Pepper
Optional Crushed red pepper to taste

Optional Toppings:
Thin slices of Lemon
Feta Cheese

Directions
Heat olive oil in pot. Add in shallots and red pepper flakes (if using) and cook until soft.
Add in greens, broth, lentils, salt and pepper. Bring to a boil. Once boiling, cover and turn down heat to simmer and cook until lentils are almost soft (around 20-30 minutes).
Once lentils are soft, remove from heat, add in lemon juice and stir. Add optional toppings and enjoy!

Tip: Make sure you read the ingredients list on your broth. A lot of brands add in sugar. Trader Joe’s has a great organic broth without sugar.
